This is fresh and suitable for freezing.
Comes vacuum packed for maximum shelf life.
Take out of fridge to bring to room temperature before cooking. Sear on each side until caramelised and golden, either in a pan or on a hot BBQ. Then pop in the oven at 180 for 10-15 minutes (comes out medium rare) or pop towards the outside of the BBQ, off the heat. Allow to rest for as possible and don’t forget the sear the fat across the top for maximum flavours and juiciness!
